Taking Spring Cleaning to a Whole New Level

By April, we are full tilt into spring.  This time of year promotes continued cleansing of the body and supporting the liver, which clears out toxins and replenishes the flow of energy and harmony in our being.  One of the best way to be clean is to eat clean.  This means focusing on whole foods that have most recently been in the sun, including fresh greens and other vegetables.  Below is a tasty, simple and completely satisfying salad stuffed with nutrients, such as vitamins A, B12, C and K along with carotenoids, fiber, folate and magnesium---does a body good! 

Have an adventure and add other vegetables that you may start to find at local farmer’s markets.

Dragon Bowl Salad

Ingredients

  • 2 cups mixed salad greens

  • 1 medium-size tomato, seeded and cut into wedges

  • ¼ cup chopped cucumber

  • ¼ cup chopped, mixed fresh parsley, cilantro and dill

  • 1 tablespoon chopped onion

  • ½ cup cauliflower florets

  • ½ cup broccoli forest

  • 4 canned artichoke hearts, quartered

  • 2 hearts of palm, sliced

  • 1 stalk celery, chopped

  • 3 baby carrots, sliced

  • 3 sliced olives

  • 4 ounces protein of choice

  • Recommended oil and vinegar dressing or other low-processed dressing

Assembly

Place all ingredients in a bowl, toss and enjoy!
